Tiramisu

Ingredients:

- 3 eggs
- Sponge fingers
- 80 gr of sugar (slightly reduce the amount of sugar if you use a sweet cocoa powder)
- Vanilla extract 
- 250gr of mascarpone
- Black coffee
- Cocoa powder (Van Houten)
- Rhum or Amaretto (optional)


Instructions:

- Separate the whites from the egg yolks. Mix the egg yolks with the sugar, using an electric hand mixer, until the mixture doubles in size. 
- Add the mascarpone with the electric hand mixer. 
- Clean the mixer and whisthe eggs with a bit of sugar to form stiff peaks. Add softly the whisked egg whites to the previous mixture.  
- Quickly dip the sponge fingers into the black coffee (especially if you are using soft sponge fingers. If they are over-soaked the tiramisu is going to be quite liquid). Line the bottom of  a tin with the sponge fingers. 
-  Add a layer of the mascarpone mixture on the top of the biscuits and sprinkle it with cocoa powder. Repeat the procedure (biscuits+ mascarpone mixture + cocoa powder). End the tiramisu by a layer of mascarpone mixture dredged with a generous layer of cocoa powder. 
- Cover with cling film and put in the fridge for at least 6h.
